In Situ Spirits Ensamble Ancestral Tobasiche Barril Espadin Mezcasiarca Mezcal - 750ml Bivio Italia John Walker & Sons OdysseyCrafted by the incomparable "In Situ Team" of maestro mezcaleros, this unique mezcal is distilled from 100% Cuixito (A. karwinskii), a smaller subspecies renown for its distinctive characteristics. Employing traditional practices, the agave is cooked in an earthen oven, milled manually using wooden mallets and a mechanical crusher, and fermented in open air wooden vats made of oak. The spirit is distilled twice using traditional Filipino style clay
